Protein Banana Bread

I’ve never ever liked bananas, but when I started my carb cycling diet all I ever seem to want is bananas!

Another website I visit regularly is Protein Pow. Anna started Protein Pow in 2011 and it was born because she had three passions – a passion for exercise, a passion for nutrition, and a passion for creating healthy and delicious food. One of Protein Pow’s recipe featured on bodybuilding.com which I stumbled across when I was look for some new exercises to do in the gym. I printed this recipe off straight away because I knew I just had to make it!

Ingredients –

1 cup of cartoned almond milk

1/2 cup of whey protein (banana, vanilla or unflavoured)

ripe bananas

1/2 cup of liquid egg whites

3 tbsp coconut flour

1 tbsp vanilla extract

4-6 medjool dates (depending on how sweet you like your banana bread)

1 handful walnuts

1/2 tsp baking powder

Method –

Blend all ingredients together.

Pour the batter in a bread muffin mold.

Bake at 170 C for about 45-60 minutes or until inserted knife comes out clean.

I love this recipe because per serving, there is – Calories 87, Total Fat 2.6g, Total Carb 9.1g, Protein 6.4g & Fibre 2.3g and it is so simple to make. It’s a very moist bread, so I would recommend having a slice toasted, smothered with Nuts n More Chocolate Peanut Butter.
