Salted Caramel Protein Cheesecake Bites

Salted Caramel – one of my favourite flavour combinations ever. I’ve had this recipe sat around waiting for a while and as soon as I heard that Efectiv Nutrition were launching a Salted Caramel Whey, I knew it was time to share this with you.

Ingredients –

Base –

2 cups Gluten Free Oats

1 cup Pecan Halves

1 cup Pitted Dates

2 tbsp Salted Caramel TRKG Syrup

2 tbsp Almond Milk

Filling –

2 cups Total 0% Greek Yoghurt

1/2 cup Natvia Icing Sugar

1 scoop (30g) Efectiv Nutrition Salted Caramel Whey

2 tbsp Salted Caramel TRKG Syrup

Topping –

1/2 cup Soaked Pitted Dates

2 tbsp Salted Caramel TRKG Syrup

2 tbsp Almond Milk

Method –

1. First things first, soak the 1/2 cup of pitted dates for your topping for as long as possible in warm water. Put them aside and crack on with the rest of the recipe

2. Set your oven at 180 degrees and line a baking tray with baking parchment. Spread the gluten free oats and pecans on the baking tray and roast in the oven for 10-15 minutes

3. Once they are done, blend in a food processor with the pitted dates, melted coconut oil, almond milk and TRKG salted caramel syrup

4. When all the ingredients are combined, pour into a square tin and press down. Pop in the freezer for 20 minutes to set

5. Next sept, it’s filling time! Combine all of the filling ingredients in a food processor/mixer until you get a smooth but thick mixture

6. Take the base out of the freezer, and pour the filling on top. Pop into the fridge and now it’s time to make your salted caramel topping!

7. Drain the pitted dates, pop into a blender and combine with the TRKG syrup and almond milk. Blend until you have a smooth but slightly sticky mixture. Take your cheesecake out of the fridge and pipe the salted caramel on top leaving a good space in-between each one.

8. Pop in back into the fridge to finish setting then take it out and cut in squares when ready!

Only one word is needed to describe this – delicious. The base isn’t set too much so it is soft, and the salted caramel flavour isn’t overpowering at all. Another beautiful dessert that is a healthier version of your every day cheesecake. My Auntie is visiting from Aberdeen and even she loved it! Now that’s saying something 🙂 Unfortunately, the Efectiv Nutrition Salted Caramel Whey isn’t going to be available until June!!
