Deliciously Creamy Warm Chia Pumpkin Pudding

So seeing as everyone is pumpkin crazy in the autumn, I thought it would be a perfect time to share this super quick indulgent recipe with you, because lets be honest, who doesn’t love pudding for breakfast?
I threw this recipe together one friday night before work because I was going to a friend’s birthday and knew i’d just want to grab something ready prepared in the morning, so it’s perfect if you need something quick and takes about 30 seconds to prepare!
Personally, I use pumpkin all year round in baking because it creates a soft and moist texture which is great in stopping protein products drying out your treats, plus, Libby’s tinned pumpkin is available at Tesco’s all year round and I tend to stock up whenever it’s on offer too.
2 TBS Chia Seeds (I used Kaizen Living)
1 large heaped TBS Pumpkin puree (I used Libby’s but you could make your own)
1 TBS Pumpkin Spice syrup (I used Jordan’s)
150ml Milk of choice
1/2 scoop Cinnamon or Vanilla Whey
(I used PEScience Snickerdoodle from Cardiff Sports Nutrition because it tastes like cinnamon sugar and I love it OR you omit this all together)
1 TSP Cinnamon
1 TSP Natvia
1/2 TSP Nutmeg
1.Combine your whey and milk into a jar or shaker and give them a good shake
2.Next, add your pumpkin and spices and give it another shake
3.Pour the mixture over the chia seeds and stir together
4.Pop in the fridge overnight to set
5.In the morning simply microwave for 1 minute, stir, then heat for a further minute and enjoy!

Personally I love frozen berries or trail mixes or..
For something more indulgent, reeses pieces and chocolate sauce using Kaizen Living cacao
