Autumn, my favourite time of the year. Pumpkins, cinnamon, stews, comfort food, duvet days & fluffy socks. Just a couple of reasons as to why I am so in love with Autumn.
I have fallen off the bandwagon since moving out. I am still cooking healthy and delicious meals, but my snacks are not as healthy as they should be. I’ve turned into a crisp monster all of a sudden haha. Being a crisp monster is fine, but in moderation. I had a day off on Sunday (which is very rare), so I decided to make some Pumpkin Spice Protein Balls which I can have whilst on the go at work.
This has been adapted from my Raw Protein Marzipan Bites recipe. The only difference is that I have added my home made pumpkin spice which has given it an incredible Autumnal flavour.
Home Made Pumpkin Spice (make before)
4 teaspoons Ground Cinnamon
2 teaspoons Ground Ginger
1 teaspoon Allspice
1 teaspoon Ground Nutmeg
Pumpkin Spice Protein Balls
1 cup Sukrin Almond Flour
5 tbsp Raw Maple Syrup
1.5 tbsp Home Made Pumpkin Spice Mix
1 tbsp Unsweetened Almond Milk
1. In a food processor, combine all of the dry ingredients together
2. Add the maple syrup and combine again until you have a firm but sticky mixture
3. Take a tablespoon of the mixture and roll into a ball, continue until you use all of the mixture
4. Sprinkle some of your pumpkin spice mix over the top and store in the fridge for 15 minutes until set
5. Take out, and demolish!
Do you know what is so amazing about these delicious balls? They are packed full of protein, fibre, good fats and low carb! AND, they taste insanely good. This is a fantastic recipe because you can adapt is very easily 🙂
