Some of you may or may not know, that Vian and I actually live 2 hours away from each other haha. And once again, Social Media has given us the opportunity to meet again but this time up in Manchester.
Pamela Higgins (also known as Spamella) has just taken the big leap into working freelance and she is already doing so well! Pam is a culinary genius when it comes to creating healthy alternatives that allows you to have your cake and eat it too.
On Thursday 24th September, Twitter was going crazy because the amazing Pamela had announced that she is doing a Supper Club that is going to be filmed for Channel 4. Both Vian and myself were absolutely over the moon when we found out that Pam had been given this amazing opportunity. This is something we didn’t want to miss!
Tickets were purchased, travel arrangements sorted and the excitement for the evening was growing day by day! I’m not going to lie, after drooling over all of Pamela’s blog I have very high expectations.
The evening was being held at a cute little cafe in Chorlton, a suburb of Manchester. On a buzzing main road full of restaurants and bars, the Post Box Cafe stood out with their bright red sign and cute little garden out of the front. Vian had driven for 6 hours and we were both absolutely starving! As we walked into the cafe, we were welcomed by the most incredible smell. This certainly got our tummies rumbling! We took our seats and Pam welcomed us to the event. After a big whoop & a cheer, we consulted the menu & boy was I excited.
Starter – Chickpea, Feta & Quinoa Stuffed Peppers
My only concern, was that I don’t like peppers, eek! The starter was beautifully presented and smelled amazing. For someone who hates peppers, this was absolutely delicious. The peppers were sweet, the chickpeas and quinoa were seasoned to perfection, there was a nice hint of herbs and a little spice, and the feta added that bit of saltiness. Starter, 10/10.
Main – Smoky Chicken, Chorizo and Chipotle Stew with Sweet Potato Mash
The main dish is my idea of comfort food, something to snuggle up to on a cold night. Now this, is my kind of dish! The portion sizes were perfect and the smell that wafted past my nose as a portion was placed in front of me, was incredible. The stew was sensational, sweet, smoky, spicy, just brilliant. The chicken was cooked perfectly and the chorizo really added that extra umph. The sweet potato mash was smooth and silky, which worked so well with the stew. Main, 10/10.
Dessert – Cherry Bakewell Cheesecake Pot
Dessert, probably my favourite course anywhere I go! And lets be honest, Cherry Bakewell Cheesecake sounds absolutely insane. And, it was. The main ingredient is something that hasn’t taken my fancy before, silken tofu. I was pleasantly surprised how amazing it was, smooth, creamy and so delicious! Something I am definitely going to consider experimenting with. The cherry’s were chunky, sweet, sour and worked so well with the creamy cheesecake filling. The topping was a mixture of oats and roasted nuts which added a great texture, giving you a little bit of crunch. Dessert, 10/10.
And of course… that wasn’t it. Pam went round all the guests and served delicious homemade chocolates ❤
I literally cannot fault Pam at all. The dishes were beautifully presented and all tasted incredible. Some people would say that travelling 6 hours for a 3 course meal to then drive back home straight after is a mission. And yes, it is. BUT. Pamela has been so supportive of Vian & myself, we just had to be there.
