High Protein Gingerbread Cookies

This is my favourite cookie recipe which I make over and over again. I have adapted this recipe once again to bring you these delicious high protein Gingerbread Cookies!

Ingredients (10/12 Cookies) –

210g Meridian Smooth Peanut Butter

45g Gluten Free Oats

30g Gingerbread Efectiv Nutrition Whey

70g Raw Maple Syrup

1 tsp Vanilla Extract

2 tsp Ground Ginger

1 Egg

Method –

1. Preheat the oven to 180 degrees and line a baking tray with parchment

2. Mix all the ingredients together in a large mixing bowl

3. Once the ingredients have been combined, spoon the mixture onto the baking tray to make 10-12 cookie dough balls. Flatten the cookie dough balls with the back of a wet fork

5. Place the cookies in the oven for 10-12 minutes or until they start to turn golden brown

6. Once they are cooked, take them out of the oven and leave to cool

7. Store in an air tight container for up to 5 days and enjoy! OR – eat them like I do, fresh out of the oven ❤

I’m feeling festive! 🙂 These cookies are so warming from the ginger and beautifully soft in the middle. Perfect to nibble on when you’re sipping on a cup of tea. I love baking a batch of these cookies on a Sunday and make enough to last both me and Ben all week as they’re a great snack 🙂
