Soft & Chewy Chocolate Salted Caramel Cookies! 


I’m just going to put this out there- I genuinely think this recipe is one of my best yet 😀

And you know why? There are 3 main reasons..

  1. If, like me, you love making a batch of baked goods you can eat in one sitting- then this is seriously for you as it’s essentially a baked proats recipe with a few added extras! And lets be honest, eating cookies covered in nut butter is far more enjoyable than a bowl of oats 😉
  2. It literally takes 5 minutes to throw together and only 15-20 minutes to bake (In which time you can pop off and do something else)
  3. Lastly, its seriously healthy, brimming with Vitamin A, un-saturated fats, high fiber carbs and free of refined sugar but you’d never know by their taste, so it’s a win win right?  🙂

Also… it uses the NEW BLEND of Hognuts Chocolate Salted Caramel peanut butter and believe me when I say, this stuff could actually pass as crack…


As if this flavour of peanut butter couldn’t get any better- they went and added REAL salted caramel chunks, I know I know, wizardry right?! I’ll just let the nut butter do the talking for me…

So without further ado, here’s how you make & enjoy some pretty delicious cookies… 


250g pumpkin puree (I use Libby’s)

2 egg whites

100ml water

50ml Walden Farms Caramel syrup

2 TBSP Hognuts Chocolate Salted Caramel

1 TBSP Lucy Bee coconut oil

100g oat flour (I just grind regular oats)

20g Sukrin Coconut flour

30g Chocolate whey

1 TBSP Cinnamon

1 TBSP Sukrin Gold

1 TSP Baking powder


1.Preheat the oven to 180 degrees

2.Blend together the pumpkin puree, egg white, syrup & water really well

3.Melt the Lucy Bee and pour it into the Hognuts Peanut Butter

4.Mix together all the dry ingredients (Oats, coconut flour, whey, cinnamon, sweetener, baking powder)

5.In a plastic bowl or jug, combine all the wet and dry ingredients

(You should have a thick and sticky mixture- it you feel it’s too dry, add some more water, alternatively if it feels too runny add a very small pinch of coconut flour)

6.Dolup the mixture onto grease proof baking paper (you can make 16 large cookies or about 30 small ones)

7.Pop in the oven for 15-20 minutes

8. Enjoy the entire batch, warm, smothered in even more Hognuts Salted Caramel Peanut butter or dipped into Caramel syrup! 😛
