I normally have my recipe brain waves at work when I am sat bored dreaming about food. And this idea came along when I was stuffing my face with stollen. I am totally obsessed with anything related to Christmas Pudding, especially when it comes to Christmas Pudding peanut butter. So of course, the main ingredient for this recipe is peanut butter. But not any peanut butter, Hognut’s peanut butter ❤
Hognut Butters have an incredible array of different flavoured nut butters. And this year, the Hognut’s team have re-developed their Christmas Pudding peanut butter to make it a high protein one – yay!! Trust me when I say, you won’t be disappointed.
Anyway enough of the jibber jabber, I hope you enjoy!!
100g Hognuts Christmas Pudding Peanut Butter (use DeliciousDuo for 10% off)
100g Coconut Oil
100g Raw Honey
40g Sukrin Peanut Flour
40g Kaizen Living Raw Cacao Powder
Pinch Ground Cinnamon
Handful of Dried Cranberries
1. Line a square baking dish with either cling film or baking parchment, and pop to the side.
2. Put the peanut butter, coconut oil and raw honey in a pan until melted. Whilst the mixture is melting, combine the peanut flour, cinnamon and raw cacao. Take off the heat and add the dry ingredients slowly. Once you have a smooth mixture, pop into the lined baking dish. Sprinkle the dried cranberries on top of the fudge and pop into the fridge to set.
3. Take out and cut into small squares, then dig in!
This is delicious 🙂 Warming with winter spices and deliciously creamy! The cranberries add an amazing sweet and sour taste to the fudge which cuts through the richness from the cacao. Thankfully, Ben hates all things Christmas Pudding so I get to have these beauts all to myself!
