Golden Berry Oat Bars

I was sat at work on Tuesday, tucking into my lunch and thinking about the weekend ahead when I had an amazing parcel arrive at my desk. I had been sent a box full of goodies, in the form of Golden Berries. I must admit, I had never heard of them before. However after a bit of research I discovered that Golden Berries are dried Physalis. Now this is something I had seen and tried before!

These little beauties are packed full of nutrients and antioxidants and have many health benefits! They are high in Vitamin A, Vitamin B, Potassium, Calcium, Iron and Fibre. They are believed to have anti-inflammatory activity, and many people believe that they can help with weight loss as well.

The guys at Terrafertil were so generous and sent me 2 packets of their Dried Golden Berries and some raw Chocolate covered Golden Berries 🙂 Naturally, I tucked in straight away!

I absolutely love them, not only are they sweet but they also have a sour taste to them. I think the texture is very similar to dried figs, which I also love. These berries would be perfect sprinkled over porridge and granola. But I didn’t want to just ‘sprinkle’ them onto my food. I wanted to make something with them. So as part of my food prep, I made these delicious Golden Berry Oat Bars! Perfect to grab in the morning and eat whilst you’re on the go, these delicious bars are so easy to make you’d be silly not to try them!

Golden Berry Oat Bars

Ingredients –

2 cups of Oats

Handful of Terrafertil Golden Berries, chopped

Handful of Pistachio Kernals

Handful of Sunflower Seeds

2 tbsp Snickerdoodle Hognuts Bakin’ Butter

2 tbsp Melted Coconut Oil

2 tbsp Beloved Date Nectar

2 tbsp Chia Seeds

1 tsp Ground Nutmeg

Method –

1. In a bowl, combine all of your ingredients until you have a sticky mixture

2. Line a deep square dish with baking parchment, pour the mixture in and press down

3. Pop into the fridge and leave to set for an hour or two. When you’re ready, take out of the fridge and cut into bars. Pop them into Tupperware and store in the fridge until you’re ready to devour them!

Yum yum yum yum YUM. I told you they were delicious! The thing I love most about these bars is that with every bite, you get a different flavour and texture. The nutmeg is beautiful in this, it really adds a warming flavour. The golden berries are super delicious, and add an amazing sweetness to the bars which means you only need a small amount of the Beloved date nectar.

Basically, I think they taste pretty damn good! Hope you enjoy the recipe, and don’t forget Hognuts Snickerdoodle Bakin’ Butter is available at Cardiff Sports Nutrition now! Use Vallance10 for 10% off 🙂

Beki ❤
